Salad with mâche, lettuce, purple cabbage, broccoli, grated carrot, chickpeas, pomegranate seeds, and toasted pine nuts.  All from the bio market!

I totally forgot I had run out of olive oil so I made the dressing with avocado, Dijon mustard, a little hummus, salt, juice from half a lemon, diced purple shallot, and a splash of water.

Chocolate pudding with mint and strawberries for me and my baby sister while she was visiting! Pudding is made from two avocados, about a 1/2 cup cocoa powder, maple syrup/agave/honey to taste (I put about a 3 tbsp maple syrup), vanilla, a pinch of sea salt, and a little bit of coconut milk/almond milk/soy milk to help it blend if you want. My friend Rhiannon introduced me to this recipe and I can’t stop eating it with everything. Best kind of friend to have!

Stovetop Avocado Mac and Cheese

My friend @milkshakescoldandlong and I made this tonight (but a vegan-friendly version)! It was SO tasty and incredibly easy to make. I would highly recommend this recipe.
